Shawarma vs. Doner
Shawarma is the most common Middle Eastern dish, in comparison to doners. The dish’s name is derived from an Arabic word meaning “turning,” as it’s prepared with a stack of meat grilling on a vertical grill. This delicacy belongs to the Arab-Middle Eastern region.
Similarly, doner kebab is a popular street food kebab variety in the US. To cook vertically, thinly slice the meat and stack them over each other. Doner kebabs belong to the Turkish-Middle Eastern region.
Major Differences between Shawarma and Doners
Meat Variety
Initially, the only two types of meat used to make shawarma were lamb and mutton meat. As the dish gained popularity, other meats were added to the mix, including chicken, turkey, chicken, and beef. However, what remains staple is the pieces of lamb fat between each layer to keep the meat juicy.
Doner kebabs can be made with lamb or mutton. But as the dish became increasingly popular, different varieties of meat started being used to cater to all types of customers. Pork is the only protein that can’t be used in any of these dishes.
Cooking Method
For shawarma, the layers of meat are stacked to slowly grill on a rotisserie as the rod continues to rotate. Once the outer layer has been cooked, it can be shaved and used to make a wrap.
On the other hand, doner kebabs are cooked in many ways; they can be made on skewers on the fire or coals, oven, or fried in a pan. These kebabs can also serve as a stew, similar in style to Tas kebab.
Variances
Shawarma follows a staple method of preparation and cooking. Doner kebabs can have a different recipe depending on where they are being prepared. This dish can be found in Egypt, Turkey and Arab countries. Each country has its own cooking method.
Serving Style
Shawarmas are served in two ways only: wrap-in bread or a platter where each element is placed separately. In comparison, kebabs are served on skewers in plates.
Garnishing and topping
Shawarma is often served with tahini and hummus. These condiments are essential for great shawarma.
Doner kebabs on the other hand are served with tomatoes, pickled cucumbers and onions, as well as tzatziki sauce and yogurt.
